Trehalose is a saccharide that possesses no reducing group and so has possible use in
parenteral nutrition, especially because it can be stored with amino acids without
undergoing the Maillard reaction. To evaluate this possibility, a series of experiments were
conducted. The activity of trehalase, an enzyme that metabolizes trehalose to glucose, was
